First discovery of the New Year: vermouth is sweet. No, I didn't know that before. Yes, that was my first martini. Mmmmm, martini. (Vodka version, not gin, since we had no gin. Heresy, I know.)
I once believed that vodka martinis were a heresy, but then I discovered that martinis were originally made with whatever clear liquor was in the house, sweet vermouth, and served in a sugar-rimmed glass. Modern-day appletinis are closer to the original than today's gin-and-dry-vermouth martinis.
To be fair, I prefer a cocktail onion to an olive, which means I prefer a Gibson to a Martini.

There is plenty of flexibility in the recipe.
